The Team
The Kuro experience is brought to life by a team who share a deep philosophy of Japanese precision, Australian produce and genuine hospitality.
Head Chef Tom Subileau
Tom oversees day-to-day operations at Kuro, bringing a rare combination of culinary training and hospitality expertise to the venue. Trained at Vatel Lyon and holding an MBA in International Restaurant Management from Vatel Singapore, his background spans gastronomic venues across Europe and Asia — most recently as Sous Chef at Ma Cuisine in Singapore, a Michelin-starred wine gastronomic bar.
Beyond the floor, Tom curates Kuro's wine and sake program — recognised with Two Glasses at the 2025 Australian Wine List of the Year Awards — and leads our wine events throughout the year, from regional tastings to multi-course pairing dinners in collaboration with importers and producers.
Senior Sous Chef Héctor Chunga
Héctor brings a rare perspective to Kuro's kitchen — one shaped by Peruvian roots, Japanese discipline and Spanish technique. Born in Piura, Peru, he trained at Astrid y Gastón (ranked in the World's 50 Best Restaurants) and Mayta before serving as Main Chef at the Peruvian Embassy in Tokyo - cooking Peruvian cuisine in Japan, where Japanese precision became a defining influence.
Back in Australia, he spent three years as Head Chef at Warike, developing a critically recognised Nikkei
concept before joining Kuro in 2025.
It's a background that maps naturally onto Kuro's own philosophy. Héctor's menus reflect his restless curiosity:

Fumi X
The food is inspired by Executive Chef and Co-Owner, Taka Teramoto. Taka's European culinary experience at Michelin-starred restaurants Pages (Paris), Florilège (Tokyo) & Waqu (Sydney) and his Japanese heritage result in an exceptional balance of techniques, flavour combinations and culinary instincts brought to life using high-quality Australian ingredients.

The Architecture
Nestled in a historic 1910 building, once home to a tea and jam factory, Kuro's interiors expertly marry subtle sophistication with intricate details, creating a seamless blend of the old and the new. Drawing inspiration from the centuries-old Japanese art form of 'kintsugi,' which involves repairing broken ceramics with gold, Kuro's architecture and aesthetics pay homage to this iconic tradition. Lunch: 12 pm – Last order at 1.45 pm
Dinner: Tuesday - Thursday: 6 pm – Last order at 9.30 pm
Friday & Saturday: 5.30 pm – Last order at 9.30 pm
We are closed on Sunday and Monday.
The Kuro bar is open during all lunch and dinner service — walk-ins welcome for drinks only or drinks with snacks at any time.
No reservation required for bar seating.
